Job Description

Reporting to the General Manager, the successful candidate will be responsible for managing the Food, Beverage and Rooms operations within the Hotel as well as the Banqueting Operations, the achievement of budgeted sales and profit target, as well as the overall monitoring and improving of service standards.

KEY PERFORMANCE AREAS

  • Ensure compliance with relevant health and liquor laws and other related legislation
  • Maximise sales and control cost to enhance Food & Beverage and Rooms profit margins
  • Liaise with all Departments to ensure optimum communication and co-operation
  • Ensure constantly high Guest service at all times with a focus on personalised service
  • Update menus and wine lists when required
  • Ensure that all expenditures in F&B and Rooms are kept within the set budget
  • Ensure Capital Expenditure requirements are monitored and processed in accordance with Operational requirements
  • Monitor revenue reports on daily basis and bring any discrepancies to the attention of the Manager, Finance and Administration
  • Monitor and maintain all selling prices throughout F&B department
  • Ensure month end F&B Stock taking are carried out according to set standards and procedures
  • Ensure all Quarterly F&B and Rooms Operation, Equipment and Stock taking are carried out according to Procedures
  • Preparation and implementation of annual F&B promotions Plan and ensuring an innovative, cost effective ongoing plan to increase revenue
  • Any other duties assigned by the General Manager

Required Skills or Experience

  • A Bachelor's degree in Hotel Management
  • At least 10 years experience in a 3/4 star Hotel
  • Strong promotional and Marketing skills
  • Business and commercial acumen with strong financial management ability
  • High sense of Integrity and confidentiality
  • Strong interpersonal and communication skills (both written and verbal)
  • Customer service focus with ability to build productive relationships with clients
  • Computer literacy on Microsoft (Word & Excel) Micros, Fidelio
