Job Description
Our client, a three Star Hotel situated in Accra is currently looking to hire a proactive Food and Beverages Controller to support their operations.
ROLE PROFILE
Selected candidate will be responsible for the day to day running of hotel’s services within the overall policies and controls established by the Hotel and the General Manager, ensuring that the brand values and standards are delivered and profitability achieved.
DUTIES AND RESPONSIBILITIES
COST CONTROL
- Achieve targets for Food & Beverages, whilst managing costs as stipulated on the budget.
- Control beverage cost of sales
- Control the bar, restaurant and kitchen payroll costs (overtime, casual or contract workers, etcetera)
- Control other expenses such as:
- Service utensils/stores cutlery, grocery and glassware losses and breakages.
- Cleaning and stationery supplies in restaurant and bars and kitchen
- Control Food Cost of Sales:
- Tight restaurant billing procedures and spot checks on waiters’ charges.
- Reduce staff pilferage
- Co-ordinate with East Legon Manager regarding slow moving items on the menu.
STOCK CONTROL
- Ensure all outlets are adequately stocked with service utensils, beverage and wine stocks.
- In charge of Food & Beverage service outlets,
- Co-ordinate with Executive Head Chef and supervises and advises on food presentation, especially with breakfast and dinner buffets.
- Conduct hygiene and cleanliness inspections in Food & Beverage outlets on a regular basis.
- Ensure high standards of personal hygiene and cleanliness are maintained by staff in Food & Beverage outlets.
- Attend daily kitchen briefings (to note items like daily specials etcetera)
OTHER CORE RESPONSIBILITIES
- Assure smooth operations of the Food & Beverage service outlets and high quality Food & Beverage standards.
- Promote and assist the maintenance of good internal relations and communications with other departments in the hotels.
- Promote and participate in the maximization of departmental profitability
- Guest Relations- ensure a minimum of 80% guest satisfaction is maintained at all times.
- Set goals, targets for restaurants, bars and follows up on progress.
- Conduct and/or attends daily restaurant briefings (to include bars) on day to day operational details, complaints and or weakness observed the previous day.
- Attend weekly Food & Beverage meetings relating to:
- Operational and financial results.
- Projected business and successful efforts.
- Productivity and quality improvements.
- Operational problems and or management policies (implementation)
- Maintain effective employee relations with management and supervisors, waiters, kitchen and bars.
- Conduct personnel appraisal interviews as laid out by the company and ensures employees are supervised and disciplined to a high standard
- Supervise through Human Resources Office orientation or induction programmes of new staff in Food & Beverage outlets
- Co-ordinate follow up skills training programmes for service departments
Required Skills or Experience
EDUCATION
Bachelor’s Degree in Business or Higher Diploma
EXPERIENCE
At least 3 years’ experience in a similar challenging role
REQUIREMENTS
- Food & Beverages skills training
- Cost of Sales (COS) Controls
- Stock management
- Menu and Beverage costing
- Appreciation of Menu Engineering Processes
- Knowledge on Cutting edge food and beverage concepts, Wine & Spirits, Cocktails and Budgeting process and the ability to interpret Profit & Loss reports.
- Basic decor skills, food and beverage garnishes and generic hotel trends
