Job Description

A reputable 4 star hotel located in the Airport Residential Area is looking for an Experienced Restaurant Manager.

Job Purpose
To achieve the hotel’s food and beverages revenue target through the delivery of exceptional customer service, efficient operations of the restaurant, bar and lounge and effective supervision of employees.

Main Duties and Responsibilities

  • To develop and implement strategies for the Food and Beverage outlet that support achievement of the hotel’s revenue target.
  • Develop the annual budget in conjunction with the Finance Manager/Financial Controller and the General Manager.
  • To communicate and reinforce the Hotel’s service standards and expectation to supervisors and employees.

Specific Duties

  • Coordinate the set-up of restaurants, bar, banqueting and lounge areas in accordance with the company’s standards.
  • Inspect restaurants, bar, banqueting and lounge areas on an on-going basis and takes appropriate steps to ensure facilities meet or exceed guests’ expectations at all times
  • Assist in the development of a marketing plan for the outlet by keeping current on competitors’ activities whiles liaising with the Sales and Marketing Manager for implementation.
  • To make input to help in developing new menus and to effectively train F&B staff to obtain comprehensive knowledge of products and services.
  • Confirm daily specials and new menu additions with the Executive Chef and to inform employees during shift briefings.
  • Provide and maintain accurate and acceptable system for assigning guest tables in the restaurant.
  • To manage entire restaurant, bar and banqueting staff and to provide them with feedback to help in their professional development.
  • To organize and prepare schedules/rotas for staff based on special functions and forecast of operation
  • To provide on-the-job training and coaching for employees on effective service techniques.
  • Develop and implement strategies such as up-selling of desserts and accompaniments to achieve revenue and profit goals
  • Provide employees with the tools and environment they need to provide exceptional service delivery.
  • Assist the Human Resources manager to recruit qualified employees needed to provide the departments expected service.
  • Respond to customer concerns in accordance with the company’s policies and ensuring to include such incidents in the department’s periodic reports to management.
  • To establish training needs of the department, plan and deliver training programs with the assistance of the Human Resources Manager.
  • To be punctual to work and ensure same of the restaurant employees.
  • Ensuring that all employees adhere to the company's grooming/uniform standards and attendance.
  • Maintaining high standards of quality control, hygiene, and health and safety standards
  • To meet and mostly exceed set targets for the department.
  • To submit daily, weekly and monthly situational reports to the Food & Beverage Manager as scheduled.
  • Any other duties that may be assigned from time to time.

Food & Beverage Reports

You are required to prepare:

  • Weekly & Monthly Food & Beverage cost of sale report
  • Weekly performance report.
  • Detailed monthly financial performance report.
  • Any other reports that may be required by management.

Required Skills or Experience

  • A minimum degree in Hotel Management or its related discipline
  • He/she must have at least 5-10 years’ work experience as a Restaurant Manager or related management role in the Food & Beverage Department in a 4- 5-star hotel.
